a Collins (small 8oz) glass...
3 fresh Small ripe strawberries (hulled)
2 shot Old Tom gin
1 shot Freshly squeezed lemon juice
½ shot Sugar syrup (2 sugar to 1 water)
Top up with Soda from siphon

How to make:

MUDDLE strawberries in base of shaker. Add other ingredients apart from soda, SHAKE with ice and fine strain into chilled glass (without ice). TOP with soda.

Comment:

Fruity and all too easy to drink. Don't hold back, the lack of ice in this tall drink requires you consume while still cold. But responsibly, of course.

This Gin Fizz adaptation was created circa 1880 at the St. Nicholas Hotel, New York City.
