1 fl oz	Pink grapefruit juice (freshly squeezed)
¹⁄₂ fl oz	Lime juice (freshly squeezed)
¹⁄₃ fl oz	Sugar syrup 'rich' (2 sugar to 1 water) 65.0°Brix
¹⁄₂ fl oz	Egg white (pasteurised) or Fee Brothers Fee Foam cocktail foamer
3 ¹⁄₃ fl oz	Red bitter soda (chilled)

Prepare

Select and pre-chill a HIGHBALL (MAX 10OZ/300ML) GLASS.
No garnish to prepare.

Method

SHAKE first 6 ingredients with ice and strain back into shaker.
DRY SHAKE (without ice) to emulsify.
STRAIN to chilled glass (without ice) whilst also pouring red bitter soda.

Garnish

Serve naked, without garnish.
