To make Roasted coconut cordial:
2-3 coconut shells, dried & roasted for 2-3 hours. Infuse roasted shells with 700ml hot water (sous vide) for 1 hour and strain. Combine 70g citric acid and 250g sugar with the coconut shell water, cool and bottle.
