1 1/3 fl oz Light white rum (charcoal-filtered 1-4 years old)
3/4 fl oz Cognac (brandy)
1 1/3 fl oz Orange juice (freshly squeezed)
1 1/3 fl oz Pineapple juice (chilled)
1/2 fl oz Lemon juice (freshly squeezed)
1/3 fl oz Sugar syrup 'rich' (2 sugar to 1 water) 65.0°Brix

How to make

Glassware

Serve in a Collins glass

Prepare

  1. Select and pre-chill a COLLINS GLASS.
  2. Prepare garnish of pineapple wedge skewered with a Luxardo Maraschino Cherry.

Method

  1. SHAKE all ingredients with ice.
  2. FINE STRAIN into chilled glass.

Garnish

  1. Garnish with pineapple wedge on rim skewered with maraschino cherry.

Very pleasant, Trader Vic may even have been jealous! I made it with only ~4 ml 1:1 sugar syrup, but I prefer tart over sweet. Orange and pineapple juices are sweet enough that I may even prefer it with no syrup at all. I've only had the one, but am thinking that served on crushed ice may be even better, but perhaps that's my Trader Vic conditioning. And I definitely recommend garnishing with a cherry and pineapple wedge (in the photo, but not the instructions).
