Glass:

Serve in a Collins glass

Ingredients:
1 12 oz Light white rum (charcoal-filtered 1-4 years old)
1 oz Rémy Martin V.S.O.P. cognac
1 12 oz Orange juice (freshly squeezed)
1 12 oz Pineapple juice
12 oz Lemon juice (freshly squeezed)
14 oz Monin Pure Cane Syrup (65.0°brix, equivalent to 2:1 rich syrup)
× 1 1 serving

Prepare:

  1. Select and pre-chill a COLLINS GLASS.
  2. Prepare garnish of pineapple wedge skewered with a Luxardo Maraschino Cherry.

How to make:

  1. SHAKE all ingredients with ice.
  2. FINE STRAIN into chilled glass.

Garnish:

  1. Garnish with pineapple wedge on rim skewered with maraschino cherry.

Review:

Well-balanced and very fruity.

Very pleasant, Trader Vic may even have been jealous! I made it with only ~4 ml 1:1 sugar syrup, but I prefer tart over sweet. Orange and pineapple juices are sweet enough that I may even prefer it with no syrup at all. I've only had the one, but am thinking that served on crushed ice may be even better, but perhaps that's my Trader Vic conditioning. And I definitely recommend garnishing with a cherry and pineapple wedge (in the photo, but not the instructions).
