40ml Italicus
60ml still sake - Tokubetsu Honjozo
30ml nasha pear cordial
5ml Suze
2.5ml thyme hydrosol
Inspiration:
The inspiration behind my drink is Yayoi Kusama and her art work. This Japanese artist works in contemporary art movement and her signature works include dotted art pieces. "Da Punto a Dotto" - a synergy between Japanese culture and Italian art of aperitivo. The floral notes of Italicus are complimented by the subtle tones of Nasha pears and the dry, umami notes of Sake. Together with dry vermouth and herb notes of thyme, this spritz has a light, sweet character that allows Italicus to shine through. Lengthening the spritz by carbonation rather than the traditional use of Prosecco gives the drink a modern and refreshing twist. "Da Punto A Dotto" is great to be enjoyed on its own or as a refreshing beginning to a meal.
