Giacomo Gianniotti, Paradiso

A native of Carrara, a small town in Tuscany, Italy, where his family owns an ice cream shop Gelateria Paradiso, Giacomo Gianniotti's passion for hospitality began when he was young.

After his studies, he took the leap and moved to London. Giacomo spent four years in the UK capital, training at some of the best bars, including Be at One and Eclipse Cocktail Bar. Giacomo later moved to Barcelona where he established his business, Paradiso Cocktail Bar.

40ml Italicus
30ml Dry Spanish Vermouth
10ml Ratafia from Catalonia
Rose and blackberry soda
1 hit of Rhubarb bitter

Inspiration:
Floral, fresh. An aperitif cocktail that mixes the aromatic notes of Italicus with the floral notes of soda and toast from ratafia, balanced by a local dry Vermouth.

What the judges thought:
"Giacomo's perseverance in the Barcelona cocktail scene has not stopped during these challenging times and his passion has kept his staff and all hospitality colleagues engaged and vigilant pushing boundaries once again to find new ways of being creative and constantly innovative. For us, he represents a model for everyone, an inspiration for the yesterday, today and tomorrow bartender."
