Rocks glass

Garnish:

Garnish with nice looking basil leaves.

How to make:

Muddle the honeydew melon cubes in the shaker.
Smash the basil leaves in your palms and drop them into the shaker.
Add Hayman's Old Tom Gin, lemon juice, sugar syrup and an egg white into the shaker.
Dry shake to create foam.
Shake with ice.
Double strain into a rocks glass.
Garnish with basil leaves.

1 1/3 fl oz Hayman's Old Tom Gin
5 cube Melon (Honeydew)
4 leaf Basil leaves
1 fl oz Lemon juice (freshly squeezed)
2/3 fl oz Sugar syrup 'simple' (1 sugar to 1 water, 48°Brix)
1 fresh Egg white
