Honeydew melon ball Mint
1) Muddle 2 chunks of Honeydew Melon with 15ml of freshly squeezed lime juice in a shaker
2) Add 15ml of 2:1 Honey Syrup
3) Add 7.5ml Green chartreuse
4) Add 37.5ml of Hayman's Old Tom Gin
5) Shake it with ice
6) Double strain into a champagne flute
7) Top it off with about 75ml of Champagne Brut
8) Garnish with a Honeydew Melon ball and a sprig of mint on a cocktail skewer

1/4 fl oz | Green (Verte) Chartreuse liqueur |
1/2 fl oz | Honey syrup (2 honey to 1 water) |
2 1/2 fl oz | Brut champagne/sparkling wine |
