We suggest no garnish. Some may enjoy the cocktail with a light dusting of cocoa, but we feel that's gilding the lily a bit.
1. Place a large format ice cube in a chilled old fashioned glass. Set aside.
2. Add all ingredients to a shaker, egg white last. Add ice. Cap and shake.
3. Double strain (Hawthorn and fine mesh) into prepared glass.

| 1/2 fl oz | Blood Orange Juice (freshly squeezed) |
| 1/4 fl oz | Lemon juice (freshly squeezed) |
| 4 dash | Angostura Cocoa Bitters |
| 2 drop | Saline solution (20g sea salt to 80g water) or merest pinch of s |
| 1/2 fl oz | Egg white (pasteurised) |
