Lemon Zest
1. Combine all ingredients besides red win and soda in a shaker.
2. Shake with ice.
3. Dry Shake.
4. Fine strain into pre-chilled glass.
5. Top up with soda.
6. Float red wine.
7. Express the lemon zest and then discard.
| 1 fl oz | Pallini Limoncello liqueur |
| 1 fl oz | Hayman's London Dry Gin |
| 1/2 fl oz | Egg white |
| 1/3 fl oz | Orgeat (almond) sugar syrup (2:1) |
| 1 fl oz | Yuzu juice |
| Top up with | Soda (club soda) water |
| 2⁄3 Float | Rioja (Crianza) red wine |
