Perhaps worth trying another espresso pod with more robusta coffee to add more bitterness/depth of flavour.

Bizarrely delicious.
Would never have thought pineapple and espresso would work so well. Made it with Stiggins Fancy and Mr Black. A rare case where a less intense coffee liquor might have worked better, but still inexplicably tastey with beautiful foam crema on top.

Made this without the pineapple juice (by accident) and found it quite enjoyable!
Mum rated it five stars and said it's excellent but missing something... maybe coffee bitters?
