Did a comparison between the boozy version and the new, boozy won out. Pineapple was a little too prevalent in the new version, and the higher pisco/maraschino ratio to cognac was more to my liking. I also found Angostura superior to Peychaud's, I would likely even drop down to one dash if I make this again in the future.
Having been born in Peru but growing up in the US, I love to try any new drinks that include Pisco. This was a very nice, complex flavored drink that I really appreciated. To make it easier to measure in ounces, I went with 1/2 oz. Luxardo and 1 oz. pineapple juice. People not used to Pisco don't realize it tends to have what I call a "time delay" on it's effect (may be the White Shark effect noted below, LOL). Well done.
Great move Simon! I love these proportions with this ‘new’ recipe. This is very delicious and is now my goto brandied tropical awesomeness that, as Sally noted, hits like a great white.
