Serve in a Coupe glass

Ingredients:
1 23 oz Rémy Martin V.S.O.P. cognac
16 oz BarSol Mosto Verde Italia Pisco
0.42 oz Luxardo Maraschino liqueur
56 oz Pineapple juice
2 dash Peychaud's or other Creole-style bitters
× 1 1 serving

How to make:

  1. Select and pre-chill a Coupe glass.
  2. Prepare garnish of pineapple wedge and Luxardo Maraschino Cherry.
  3. SHAKE all ingredients with ice.
  4. FINE STRAIN into chilled glass.
  5. Garnish with pineapple wedge and maraschino cherry.

History:

I merely added a splash of pisco to the classic Club Cocktail, which first appeared in W.C. Whitfield's 1939 Just Cocktails' book to arrive at this delicious recipe:
60 ml Cognac
7.5 ml Pisco
15 ml Maraschino liqueur
22.5 ml Pineapple juice
2 dash Peychaud's/Creole-style bitters
While delicious, this recipe is boozy, so in June 2020, I rained this back to the recipe above.

Did a comparison between the boozy version and the new, boozy won out. Pineapple was a little too prevalent in the new version, and the higher pisco/maraschino ratio to cognac was more to my liking. I also found Angostura superior to Peychaud's, I would likely even drop down to one dash if I make this again in the future.

Having been born in Peru but growing up in the US, I love to try any new drinks that include Pisco. This was a very nice, complex flavored drink that I really appreciated. To make it easier to measure in ounces, I went with 1/2 oz. Luxardo and 1 oz. pineapple juice. People not used to Pisco don't realize it tends to have what I call a "time delay" on it's effect (may be the White Shark effect noted below, LOL). Well done.

Nice complexity and dimension in this recipe. Definitely preferred over the Whitefield recipe. Next time I’ll use a little less Luxardo liqueur.

Great move Simon! I love these proportions with this ‘new’ recipe. This is very delicious and is now my goto brandied tropical awesomeness that, as Sally noted, hits like a great white.
