Very easy drinking. Vanilla and pineapple mingle with rum. Added a drop or two of vanilla extract instead of infusing the rum.

Had to try this one as it is the same last name as my husband. Very nice rift on a daiquiri. I was expecting it to be a bit sweet, but it was perfect with that hint of sour from the lime and the touch of pineapple. Like that the rum flavour is still there and not masked. Have not gone wrong with any of Simon's cocktails. Thanks.

Very nice and smooth but I added a little bit more Vanilla Syrup and little bit less light rum. Now it's perfect :)
