A full barspoon of absinthe may give pause, but Discerning Drinkers need not worry; while absinthe is notable, it is in proper harmony with the sherry and cognac. A nice change of pace.
Very nice - initial taste is full of dried dark fruit from the cognac and PX. The absinthe is delayed a bit before making it's entrance, and then it never dominates, but adds a pleasant bit of anise to complement the congnac and sherry. Not a boozy/hot cocktail. Lingering finish is led by the absinthe - very nice.
My first taste from the mixing glass suggested absinthe would dominate, but a good stir later proved not so. Rich and deeply fruity, the flavours balance each other well, tho still distinctly absinthe-y. Very nice digestif.
Perfect after-dinner cocktail. The absinthe is strong, but tempered by the cognac and sherry. Does need a long stir, but is an outstanding finale to a wonder meal.
