Being out of marmelade, I have replaced it with a homemade bergamot jam, which probably revolutionized the overall flavour. The result was strongly bitter (despite the added extra sugar syrup to balance the extra bitterness of the bergamot), but in a very pleasant way. A sipper, strong, bitter, decise and overall well balanced.
What a wonderful tribute to Paddington. It is perfect for his name. Used an organic orange marmalade which is not as sweet as many of the others in the stores. Loved the hint of orange in this Martini variation.
I made this with my own homemade seville orange marmalade, so was expecting great things! It was very nice, don't get me wrong, but the marmalade does dominate (which is maybe the point), but it did seem to rather undersell the pisco, which deserves a front and central role. Might be worth reversing the gin/pisco ratios? Just a thought...
