I've never been a fan of the Godfather due to the scotch but this simple replacement has proven to be a strong favorite for after-dinner cocktails. I round up my proportions to a full 2oz of cognac and 1oz of amaretto and though it's very sweet with the amaretto, I find the cognac has room to tickle the palate. Great cocktail for company who aren't into stronger liquor!

Nice evening sipping cocktail. Did find it a tad on the sweet side for my tastes. I would make again, but reduce the amaretto by 1/3.

I would agree. Or up the cognac by a third to have a full glass. ;)
