Honey + ice = coagulated honey in the shaker. Still - tastes amazing!

If using raw honey then stir with the rum and lime in the base of your shaker until dissolved, then add the ice and shake. However, as suggested by Moe I have changed the recipe to use honey syrup.

You could try to make a honey syrup by mixing the honey with warm water (3 parts honey to 1 part water is usually sufficient). You might have to adjust the recipe a little.
