Joseph Cartron Apricot Brandy is made with apricots from the Mont du Lyonnais (near Lyons), France. These are harvested when very ripe after the summer sunshine has guaranteed a high sugar content and orangy-red colour.
These fleshy stoned fruits not only provide fruity aromatics when infused in alcohol but also give this liqueur its subtle almond notes. Added cognac gives Joseph Cartron's Apricot Brandy structure and delicate woody flavour.
The vats are loaded with fruit up to two-thirds of their volume and then topped with pure alcohol. Maceration is carried out at room temperature and lasts seven to eight weeks. The resulting infusion is then racked and carefully filtered. The slow incorporation of crystallised sugar naturally reduces the alcohol content and amplifies fruit flavours, while added Cognac provides length and complex woody notes.
