Joseph Cartron make their Crème de Framboise with raspberries from the Hautes Côtes de Bourgogne area, less than 20kms from Nuits-Saint-Georges, and has worked with the same producers for generations.
A blend of Lloyd George and Rose de Plombières raspberry varieties is used to load the vats to two-thirds of their volume, then filled them with pure alcohol. The infusion is carried out at room temperature and lasts four to five weeks, allowing the colour and aromas of the raspberries to be fully extracted by the alcohol.
The infusion obtained is then decanted and carefully filtered. Crystallised sugar is slowly incorporated, and this naturally lowers the alcohol content and amplifies fruit flavours.
Store in a fresh place after opening, and ideally refrigerate if the bottle is to remain open for several months.
