¹⁄₂ fl oz	Lime juice (freshly squeezed)
¹⁄₃ fl oz	Sugar syrup 'rich' (2 sugar to 1 water) 65.0°Brix
10 fresh	Mint leaves
⁵⁄₆ fl oz	Thomas Henry Soda Water

Garnish: Mint sprigs bouquet & lime slice wheel

How to make

Serve in a Collins glass

Method:

POUR first 4 ingredients into glass half filled with crushed ice. Churn with a spoon to mix ingredients and bruise the mint leaves. Fill glass with more crushed ice and top with soda.
