Martini glass

Garnish:

Dehydrated lime wheel and angostura bitters drops.

How to make:

Add all ingredients to shaker and dry shake. Then shake with cubed ice before double straining into a chilled martini glass.

1 2/3 fl oz Hayman's Old Tom Gin
5/6 fl oz Cointreau triple sec liqueur
5/12 fl oz Lemon juice (freshly squeezed)
5/12 fl oz Lime juice (freshly squeezed)
1 dash (4 drops) Angostura or other aromatic bitters
1/2 fl oz Sugar syrup 'rich' (2 sugar to 1 water, 65.0°Brix)
5/12 fl oz Egg white (pasteurised)
