
Dehydrate or put the blueberry thyme residues. Make them sugar crisp.
Blueberry thyme syrup:
Blueberry 50g, sugar 100g, thyme 5g
Muddle blueberries with sugar, heat all ingredients together to make syrup. Strain it after chill down and keep the residues as standby ingredient.
Blue cheese Lillet Blanc:
Blue cheese and Lillet Blanc 1:100
Hayman's Old Tom Gin: 45ml
Blueberry thyme syrup: 20ml
Blue cheese Lillet Blanc: 20ml
Lemon juice: 30ml
Put all ingredients into a shaker and shake.
Use double strainer to strain it into a Nick&Nora glass.
