Orange foam
Combine 1.75 oz. Haymans Old Tom gin, 0.75 oz. Earl Grey cold brew, 0.25 oz. Lemon juice, 0.25 oz. Simple syrup, and 1 dash of Angostura bitters into a shaker tin and shake all ingredients. Strain over ice into a rocks glass, and add 1.25 oz. Soda water. Stir 2-3 times to fully incorporate ingredients together. Garnish with Orange-infused foam from an isi gourmet whipper.

1 1/4 fl oz | Soda (club soda) water |
3/4 fl oz | Earl Grey tea (cold) |
1/4 fl oz | Sugar syrup 'simple' (1 sugar to 1 water, 48°Brix) |
1/4 fl oz | Lemon juice (freshly squeezed) |
1 dash (4 drops) | Angostura or other aromatic bitters |
1 3/4 fl oz | Hayman's Old Tom Gin |
