Nuvola Gialla

Serve in a

Collins glass

Garnish:

Fine lemon zest over the foam Optional small thyme sprig for aroma Citrus “Pennellata” (glass brush stroke)

How to make:

Citrus Oil Syrup (for brush stroke garnish)
Lemon zest from 1 organic lemon
20 ml 1:1 sugar syrup
Optional: tiny pinch of turmeric (for golden color)
Method:
Infuse lemon zest in warm syrup for 30–60 minutes
Strain
Add a very small pinch of turmeric for color
Bottle and keep chilled
Method
Chill a Collins glass in the freezer
Using a small brush, paint a single diagonal brush stroke outside the glass with the citrus oil syrup
Return glass to freezer for 1–2 minutes to set the design
Add to a shaker:
Pallini LimonZero
lemon juice
vanilla syrup
aquafaba
thyme (lightly bruised)
Dry shake hard for 30 seconds (no ice)
Add ice and shake again for 20 seconds
Double strain into the prepared chilled glass
Slowly top up with 8–10 cl Mediterranean tonic, pouring gently over a bar spoon to preserve the foam

1 2/3 fl oz Pallini Limonzero (Non-alcoholic Limoncello)
5/6 fl oz Lemon juice (freshly squeezed)
2/3 fl oz Aquafaba (chickpea water)
1 sprig Fresh thyme
3 1/3 fl oz Fever-Tree Mediterranean Tonic Water
3/8 fl oz Vanilla sugar syrup
