| 15 ml | Lustau Jarana Fino Sherry |
| 15 ml | Lime juice (freshly squeezed) |
| 15 ml | Sugar syrup 'simple' (1 sugar to 1 water, 48°Brix) |
| 30 ml | Apple juice/apple cider (cloudy & unsweetened) |
| 0.6 ml | La Fée Parisienne absinthe |
| 1 pinch | Salt (sea salt) |
| Top up with | Cava sparkling wine |
