If you make homemade sugar syrup using my recipe of two cups full of sugar to one cup of water, this will be close to 65°Brix. Thus Monin Pure Cane sugar syrup has a near-as-damn-it identical brix to my own homemade sugar syrup. Gone are my days of bothering to make my own 2:1 sugar syrup.
