Select and pre-chill a COUPE GLASS.
SHAKE all ingredients with ice.
FINE STRAIN into chilled glass.

History

Adapted from a recipe created in 2017 by Emily Muscutt at Toto, Newcastle, England.

This drink began life as a low alc./vol. cocktail, minus the genever, to reflect the trend for lower alcoholic drinks. A drink to be drunk in the afternoon - a time traditionally for tea.

A wonderfully delicate and dry aperitif. Genever provides a bready spirituous base over which flavours of gentian, fennel and absinthe are layered.

What is fennel tea? Took me ages to spot it but have no idea what it entails

It's "Fennel tea" (please see under How to make and above recipe). Not how I'd display it today, more limited to what I could do when uploading recipes back then.
