Have been buying these for years and suddenly they seem to be a rarity and much more expensive that I even paid. I may have to buy a few jars from here and have them shipped to France. An alternative are Amarena cherries they're pretty good too.
Not quite the same, but I enjoyed making my own from unsweetened morello cherries, marinated with 50% 2:1 sugar syrup and 25% each Armagnac and Luxardo liqueur, from memory. Not quite the intensity of flavour of the commercial ones, but I thought successful and a suitably aromatic and tasty garnish.
Simply the most stunning cherries available. Just the small amount of juice that comes off the cherry when you put it into a cocktail adds a rich sweetness. I could eat the whole jar.

These are the real thing. I love Manhattans and it would be much reduced without these cherries. They are absolutely delicious.
What can you do with the syrup when you've used up all the cherries though? You could pour it over ice-cream, but we don't eat ice-cream. Is there any scope for using the syrup as a cocktail ingredient?
