Finally, a clever use of overripe bananas.
I used 20 ml Stroh rum 80% because I don't have any white overproof rum. The Stroh rum gave the drink a very nice colour.
A one 9 oz scoop of crushed, would that be roughly 150 grams?
Sip this one slowly, it's strong.
Oh so good!. Only had a 1/2 shot of Chartreuse so added 1/2 shot of Giffords Banana. On hot evening this is a Banana Slushie heaven with a KICK. A real winner - though be warned the Wray & Nephew comes through to the last drop so not to many,
ps - my banana was definitely ripe
I used an overripe banana and both my wife and I really liked this cocktail. I think you are right that it is essential that the banana is overripe, otherwise you might have to compensate with creme de banane and/or sugar sirup. In my case I didn't search for an overripe banana for the cocktail, but instead searched for a cocktail to salvage an overripe banana that i was starting to get too mushy to eat.
Always on the hunt for a cocktail. Just bought a bottle of falernum to add to our "pandemic" hobby...this cocktail is a winner. The Wray & Nephew Overproof is a power house, it plays nice once combined and blended. Banana, nice touch. I feel it could be a "just" tich sweeter. Always the opportunity to make a tweek of your own!?
Nice to see Hawksmoor mentioned here, our favorite London restaurants, when we visit. May just try this one, just need to buy a banana. On holiday right now so many cocktails being mixed daily. Happy Rum Day Simon and team.
