Used in a Rum Old Fashioned with minimal bitters to track evolution as it dilutes on ice. Initially it's spice heavy with that 57% ABV. Dilution over time allows tobacco notes to move forward with a hint of molasses gaining strength. Further time on ice shifts towards the expected cocktail result - rich spice and tobacco with that Jamaican "funk" of tropical fruit. This beautiful rum holds up even as the ice cube(s) give up the ghost and takes on an enjoyable caramel bourbon facade.

Incredible rum, the layers of funk and the notes of spice and tropical fruits just hit different every time. My new favorite rum for vast majority of cocktails, i even drink some neat, way smoother then El dorado 12 for me ;)

One of my favorite bottles of rum for mixing, and a great addition to many tiki drinks. Funky and full of character, and with the proof to carry that flavor through.

Smith & Cross is n/a where I am, so Plantation O.F.T.D. (69% ABV!) used instead. Dangerously good cocktail :)

Smith & Cross is so hard to get in Australia, what's a suitable alternative for making cocktails?
