This is a cocktail where the garnish is really what makes it come together. Without the mint it's a delicious glass of funky wine but with the mint it really elevates the glass and becomes a proper cocktail. Be careful though, if you like sherry it will go down *easy*.
This failed to come together for me; will have to consider the ingredients: Lustau Oloroso, Dolin dry, peach bitters per spec and mint sprig didn't sit together happily this evening... hmm..
New favourite of mine. A sophisticated, gentle aperitivo - nice and simple. My 30 year old matusalem olorosso was a bit sweet so I upped the noilly prat by a couple of centilitres.
I tried subbing Peachtree Schnapps and Bittermens Elemakule Tiki bitters for the peach bitters, but the Oloroso and La Quintinye dry overpowered them. Not impressed, as the Oloroso and vermouth herbality dominated. ISO: peach bitters. (26 Jan 2022 6:39p)
