Light as a feather yet delightfully tasty. Some cocktails just have a bit of magic about them. We used a Rutherglen aged dry flor which made the tasty tasty-tasty.

Used a Spanish sherry, but naked amaretto from Altona, of all places. Lovely after dinner.

Any advice on how to reliably and consistently deliver a 'dash' of absinthe?

I use a Japanese-style dasher bottle. Two dashes from this bottle = 1 dash.

This is a nice way to finish off a bottle of sherry and lovely after dinner.

This cocktail is so bizarre it had to have a French name. Avant-garde? Faux-pas? Comme-ci comme-ça? As far as I'm concerned nothing to write home about. Nothing wrong with a couple of pastis really 🌅 🇨🇵

Straightforward to make, surprisingly pleasant - the taste of yellow leaves swirling to the ground.

I had no Fino, so I substituted Amontillado sherry. I find the Pétanque delicious and complex, but light. And yes, it’s great on the rocks, or rather, one large rock. It will be nice to have a classy but lower ABV cocktail to offer my guests.

Agreed. I reduced to 3 dash absinthe stirrred in. Really tasty drink. Perhaps try on-the-rocks.
