Fruity, quaffable and balanced rather than sweet, this cocktail cries out for a celebratory occasion. Originally made with lambrusco rather than my preference...
good and truly very fruit-forward but not my style. something about Calvados or Applejack to me doesn't blend well with fruity bubbles. The only time I use Calvados, cognac or brandy is in an Atomic that is made very dry with brut and nothing fruity.
I made a version using Chambord instead of Raspberry syrup and omitted the orange bitters because of Chambords slight bitterness. This might be too dry for many people (Lambrusco is mostly sweeter than prosecco) so one should check and could add some raspberry syrup to taste.
