Used my preferred 3:2:1 Sidecar proportions with 1.5 oz cognac and added 1/4 oz Herbsaint for the anise liqueur, which transformed the Sidecar into something else altogether different and flavorful and still plenty sweet.

Kind of surprised by how well the anise and cointreau work together. It's surprisingly non-sweet, but the minimal acidity still makes the drink feel like a "sweet" drink. I think I still prefer the regular Sidecar but the addition of anise is interesting. Maybe I'll make the Sidecar with an absinthe rinse next time...

This variant of the Sidecar is very good, I like the little taste of anis.

Small but potent Sidecar, very delicious, might belong in a Nick & Nora glass. "And though she be but little, she is fierce." I made it with Ricard pastis.

Being big Absinthe drinkers, this was great. The flavours of the other ingredients blend together very well while the absinthe taste kicks in at the end. Could be dangerous, as it is easy to drink, but strong.

Like the cocktail but too citrusy. Next time I'll double the booze. I find that true with many of your cocktails. But I do enjoy the many variations you have.

Agreed, way too citrusy! I've halved the citrus to fix so now it is very much "adapted" from the original. Frustratingly, I can't find my copy of Paul's book but I believe the recipe I had was as per his book with the 30ml lemon juice.

Awesome job Simon and Crew. Prior to the pandemic we could create very few cocktails. Your site has enabled us to enjoy the cocktail of the day, almost daily "Doctor does not like it " Humbug! Outside the box, if St.Nick passed this day, it would be 420 year's ago! We do not consume the products related, but it came to mind ?. Costing us a few dollars to enjoy your daily gift, although, very much worth it. Stay safe and well to all. ??

Very pleasant which reminds the sidecar with a touch of French aperitif we used to drink in the south.
