On our second visit to this cocktail, used dry vermouth instead of the red Italian. Paler and dryer cocktail. Still very flavourful with the right amount of spice from the absinthe and gin.
Wonderful with a nice aged cheddar and whole wheat crackers.

I used the tiny dash/spidgen/pinch measuring spoons one can purchase, to get the absinthe, bitters, and orange blossom in perfect Savoy harmony. Wow. It really is a perfect, perfect, drink.
I did a wash with the orange blossom water and absinthe. I also substituted Angostura Orange Bitters and added a couple extra dashes. I tried a few sips and added about 1/4 oz triple sec. All I had was cheap triple sec on hand. I liked it better with the triple sec, but I think next time I will used grand marnier. I left it on the rock(s) and it benefited from a little dilution.
The orange flower water and absinthe are a real duo. Always surprising how bright they shine in small amounts. This was nice also with Cocchi Americano Bianco.
Very well balanced cocktail. We used a spritzer for he absinthe before we chilled the glasses. Good favour of absinthe without it dominating the taste.
I did not have orange flower water so I used orange bitters. I just put enough absinthe in to coat the inside of the chilled martini glass. I found this surprisingly good and will definitely make it again!
