Food waste is a real issue in our society and brewers are no exception when it comes to waste in the form of grains.

My goal is three-pronged:

  • Utilizing and upcycling waste products
  • Support local businesses
  • Collaborate with social economy businesses in Ghent.

What we call "spent grains'' are actually grains that have been heated to a medium temperature in the beer brewing process, turning good nutritious grains into waste. This waste product is largely used as cattle feed but is still full of vitamins, minerals, and proteins which makes feeding it to livestock feel like a missed opportunity.

Alternatively, it can be dried and stabilized, which creates new tasty ways to use spent grains. E.g. milling it into flour by our local mill 'Flour Power' and letting pizza & pasta makers incorporate it into their dough, giving the dried grains to local pâtisseries to bake cookies or homemade spent grain granola, or giving it to bartenders as a base for syrups and cordials. Finding the right partners can result in biodegradable straws or personalized coasters.

There are over 10000 breweries in the world, most sending their grain to cattle which makes the scalability of this program enormous due to tons of by-product

My Ketel One drink materialises the whole idea of what we're trying to achieve. Minimizing food waste; creating local cooperation of businesses with a positive impact on our community and utilizing mindfully sourced ingredients while donating profits to a good cause.

Ingrained Cocktail

Glass: Cocktail Glass - Nick and Nora
Garnish: Orange zest & discard

  1. Peel orange zest
  2. Spray from the side of the glass over the cocktail at a 45-degree angle (no direct spray on top)
  3. Discard the orange zest

Method:

  1. Chill Nick and Nora glass with crushed ice or put in freezer 5mins prior to pouring.
  2. Grab mixing glass
  3. Pour 60 ml Ketel One Family Made Vodka
  4. Pour 25 ml of Spent Grain Cordial
  5. Take pipette (included in the Ketel One partition) - small plastic pipette
  6. Add 3 drops of Saline Solution (labeled) from the glass container
  7. Add 4 drops of our Chocolate Bitters
  8. Add cubed ice to the mixing glass
  9. Stir until properly chilled (Martini cold)
  10. Dump crushed ice out of Nick & Nora glass
  11. Take julep strainer and strain into the Nick & Nora glass
  12. Peel an orange peel
  13. Spray from the side of the glass over the cocktail at a 45 degree angle (no direct spray on top)
  14. Discard the orange zest
  15. Serve
  16. Serve spent grain cookie on the side

Ingredients:
60ml Ketel One Family Made Vodka
4 drops Chocolate Bitters

Syrup toasted spent grains
- 120gr spent grains
- 400ml water
- 340gr caster sugar (85%)
- YIELD: +- 450ml sugar syrup

Final Cordial:
- 200ml toasted spent grain syrup (85% sugar)
- 2,5gr malic acid
- 0,5gr citric acid
- 25ml Brooddrank / Brottrunk
- 25ml clarified lemon juice
- 12.5ml verjus (fat 10ml)
