This program will be implemented by renowned bartenders in China, offering internships with free accommodation and meals for selected bartenders from other bars. These internships provide hands-on experience in running a successful bar and mastering advanced techniques.

45ml Ketel One
15ml Long Jing infused Dry Sherry*
20ml Chinese Fermented Rice Wine
10ml Cream Cheese Foam*
Chocolate
Shake all ingredients in a shaker, strain and pour into the glass, garnish with chocolate.
Long Jing infused Dry Sherry:
5 grams of long jing mix with 100ml sherry, put in fridge for 24 hours, strain and ready to use.
Cream Cheese Foam:
150g cream cheese, 200ml cream, 50ml milk mix and charge.
Chinese fermented rice wine is a common ingredient all over China. It's sour and sweet and long jing. Chinese green tea brings some freshness, and sherry gives some notes of nuts. Top with cream cheese foam to bring a bit of salty touch. The white and transparent colour of this cocktail reflects the purity of the name and the intention.
