Simone Scapigliati, born in 1990s, began his journey in the world of bartending as a "game" in 2013. After only a year and a half of militancy at the "Vicious Club", he moved to the head of the bar of the "Blackmarket 101" where he remained for 3 years establishing himself in the panorama of young Roman bartenders. Since January 2019 he has been head bartender of Madeleine.

Italian Meringue:
Whisk 4 egg whites with 60 grams of sugar, separately make a syrup with 200 grams of sugar and 60 grams of water, when the syrup reaches 121 degrees pour flush into the egg whites.

Roman Mint sugar:
Finely chop in a blender equal parts of caster white sugar and dried Roman mint leaves.

Convivium" is a twist of a typical italian beverage that is used to be offered to the customer after dinner: the famous " Sgroppino". It wants to be a celebration of the typical italian hospitality: Italicus rosolio di bergamotto, Italian meringa and rose add something more to the recipe, the final refreshing touch is given by mentuccia romana, a typical balsamic herb connected to my origins.
