Glass:

Serve in an Old-fashioned glass

Ingredients:
2 fl oz Oude genever
1 fl oz Lemon juice (freshly squeezed)
23 fl oz Sugar syrup 'rich' (2 sugar to 1 water, 65.0°Brix)
12 fl oz Egg white (pasteurised) or 3 dashes Fee Brothers Fee Foam cocktail foamer
2 dash Angostura Aromatic Bitters
2 drop Saline solution (20g sea salt to 80g water) or merest pinch of s optional
× 1 1 serving

Prepare:

  1. Select and pre-chill an OLD-FASHIONED GLASS.
  2. Prepare garnish of lemon zest twist and Luxardo Maraschino Cherry.

How to make:

  1. SHAKE all ingredients with ice.
  2. STRAIN into ice-filled glass.

Garnish:

  1. EXPRESS lemon zest twist over the cocktail and discard.
  2. Garnish with skewered maraschino cherry.

Like many sours, this is all about the quality of the base spirit. I had bols classic oude. Turned out fantastic!
