1 1⁄3 oz | Monkey Shoulder Fresh Monkey |
1 1⁄3 oz | Pink grapefruit juice (freshly squeezed) |
2⁄3 oz | Bittersweet orange-red aperitivo |
1⁄3 oz | Lime juice (freshly squeezed) |
2⁄3 oz | Egg white (pasteurised) or 3 dashes Fee Brothers Fee Foam cocktail foamer or Aquafaba (chickpea water) or Vegan egg white replacement |
1 2⁄3 oz | Fiol Extra Dry Prosecco |
Garnish: Dash with Peychaud's bitters to form lines across the foaming head
SHAKE first 5 ingredients with ice and strain back into shaker. DRY SHAKE (without ice) and fine strain into chilled glass (no ice). TOP with prosecco.
