Serve in a Highball (max 10oz/300ml)

Ingredients:
1 13 oz Monkey Shoulder Fresh Monkey
1 13 oz Pink grapefruit juice (freshly squeezed)
23 oz Bittersweet orange-red aperitivo
13 oz Lime juice (freshly squeezed)
23 oz Egg white (pasteurised) or 3 dashes Fee Brothers Fee Foam cocktail foamer or Aquafaba (chickpea water) or Vegan egg white replacement
1 23 oz Fiol Extra Dry Prosecco

Garnish: Dash with Peychaud's bitters to form lines across the foaming head

How to make:

SHAKE first 5 ingredients with ice and strain back into shaker. DRY SHAKE (without ice) and fine strain into chilled glass (no ice). TOP with prosecco.
