2 fresh Mint leaves
1 1/2 fl oz Lustau Jarana Fino Sherry
1/2 fl oz Hayman's London Dry Gin
1/2 fl oz Lime juice (freshly squeezed)
1/2 fl oz Lemon juice (freshly squeezed)
1/3 fl oz Sugar syrup 'rich' (2 sugar to 1 water) 65.0°Brix
2 1/2 fl oz Thomas Henry Soda Water

Prepare

  1. Select and pre-chill a COLLINS GLASS.
  2. Prepare garnish of lemon and lime slice wheels, and mint sprigs bouquet.

Method

  1. Gently MUDDLE mint in base of shaker (just to bruise).
  2. Add next 5 ingredients and SHAKE with ice.
  3. Open the shaker, ADD soda and fine strain into ice-filled glass.

Garnish

  1. Garnish with lemon and lime slice wheels, and mint sprigs bouquet.

Keen and refreshing, plenty flavorful, Lustau Jarana Fino was well balanced amidst the gin sour and mint. I used what I suspect is Canada mint, larger leaves, menthol/peppermint flavors. ♡

Maybe it is true, but I used Tio Pepe (a sherry recommended by Difford's Guide) and it is too sherry forward, to the point of missing the mint and the gin. Not a bad drink by any means, but I much prefer a Southside Fizz.
