Review:

Best enjoyed with breakfast, strictly speaking a Mimosa should be served in a wine glass over ice, but flutes are more decadent. If you've a dry palate, use a brut or an extra brut sparkling wine and consider 15ml (½oz) more fizz and 15ml (½oz) less pineapple.

History:

"Pineapple Mimosa, anyone?" was the question "uncle" Quentin (Tom Hollander), directed at Tanya McQuoid (Jennifer Coolidge) and Portia (Haley Lu Richardson) during breakfast in Palermo in the penultimate episode of the second series of HBO's The White Lotus. First screened in December 2022, the The White Lotus made the Pineapple Mimosa a popular cocktail in 2023.
