Ingredients:
2 oz Light white rum (charcoal-filtered 1-4 years old)
12 oz Pineapple juice
14 oz Monin Coconut Syrup
12 oz Lime juice (freshly squeezed)
1 oz Brut champagne/sparkling wine
× 1 1 serving

How to make:

SHAKE first 4 ingredients with ice and fine strain into chilled glass. TOP with sparkling wine.

This is a very nice and refreshing cocktail. Being a big rum drinker, I wish it had more rum flavour, but it would not be white. I would have this on a warm afternoon. We tried pairing with a spicy Mexican dinner, and it was a bit mild for the spice of the food.
