1 oz | Amaro Sfumato Rabarbaro |
3⁄4 oz | Lime juice (freshly squeezed) |

Big and bittersweet, this cocktail explodes with flavour herbal and citrus flavours. Perhaps more a digestivo than an aperitivo.
Adapted from a recipe created in 2020 by Stephanie Andrews for Billy Sunday in Chicago, Illinois, USA. Stephanie's original recipe specifies Sfumato Rabarbaro.
Named for the bar where this cocktail was created, which in turn is named after William Ashley 'Billy' Sunday (1862-1935), a popular outfielder in baseball's National League during the 1880s. Billy Sunday went on to become America's most influential evangelist in the early 20th century, and his sermons influenced the adoption of the Eighteenth Amendment in 1919, leading to Prohibition.
