Serve in a Martini glass

Ingredients:
1 12 oz Hayman's London Dry Gin
12 oz Rémy Martin V.S.O.P. cognac
12 oz Rothman & Winter Crème de Violette Liqueur
12 oz Egg white (pasteurised) or Aquafaba (chickpea water) or 3 dashes Fee Brothers Fee Foam cocktail foamer
16 oz Monin Pure Cane Syrup (65.0°brix, equivalent to 2:1 rich syrup)
12 oz Chilled water omit if using wet ice
× 1 1 serving

How to make:

  1. Select and pre-chill a Martini glass.
  2. Prepare garnish of violet blossom or mint sprig.
  3. SHAKE all ingredients with ice.
  4. FINE STRAIN into chilled glass.

First cocktail I tasted that really brings out the delicate creme de violette in a good way (I have the one from G.E. Massenez). Like it a lot.

Bluish violet + reddish brown = greenish grey. No good. And a bit cloying for my palate.
