Serve in a Coupe glass

Ingredients:
4 fresh Raspberries
1 23 oz Bourbon whiskey
12 oz Strucchi Bianco Vermouth
16 oz Strucchi Red Bitter (Campari-style liqueur)
34 oz Lemon juice (freshly squeezed)
12 oz Monin Pure Cane Syrup (65.0°brix, equivalent to 2:1 rich syrup)
12 oz Egg white (pasteurised) or 3 dashes Fee Brothers Fee Foam cocktail foamer or Aquafaba or Vegan egg white alternative

Garnish: 2 drops aromatic bitters pulled through the foam with a cocktail stick.

How to make:

MUDLLE raspberries in base of shaker. Add other ingredients, SHAKE with ice and strain back into shaker. DRY SHAKE (without ice) to emulsify and fine strain into chilled glass.

Napoleon tendencies aside, this cocktail is bigger than its diminutive proportions, packed with bourbon-laced, expressive bittersweet fruity sourness. Enjoy and make a pig of yourself!

History:

Adapted from a recipe in 2023 by Sam Penton at the Manor Bar in the Rosewood Miramar Beach Hotel, Montecito, California, USA. Sam developed his cocktail, named "Napoleon" after the Marxist pig in George Orwell's 1945 Animal Farm, for a literary villains-themed menu.

Lovely cocktail but I’m afraid you have got a typo for the Campari. There is no way it should be 150ml right. We put in 15ml and it was fantastic.

Thanks Brian, and apologies. It should have been 5ml. Now corrected. (I selected 5, but on our system that is 5 x 30 = 150ml.)
