Ingredients:
1 12 oz Non-alcoholic gin alternative
34 oz Lime juice (freshly squeezed)
13 oz Lime cordial (sweetened lime juice)
13 oz Monin Pure Cane Syrup (65.0°brix, equivalent to 2:1 rich syrup)
0.08 oz Apple cider vinegar
3 drop Saline solution 4:1 (20g sea salt to 80g water)
1 oz Thomas Henry Tonic Water chilled
× 1 1 serving

How to make:

  1. Select and pre-chill a Coupe glass.
  2. Prepare garnish of lime wedge.
  3. SHAKE first 6 ingredients with ice.
  4. Open shaker and ADD tonic water, then STRAIN into chilled glass.
  5. Garnish with lime wedge on rim.

Inspired by the Gimlet cocktail, this version has notes of juniper, lime and a bite but without any alcohol.

History:

Created by yours truly in March 2025 and named after Rear-Admiral Sir Thomas Desmond Gimlette (1857-1943), a naval doctor who is cited by many as the originator of the Gimlet cocktail. He is said to have mixed gin with lime, the citrus fruit used by the British Navy to help prevent seamen from being inflicted by scurvy, a condition induced by vitamin C deficiency.
