Ingredients:
1 23 oz Metaxa 12 Stars
23 oz Lemon juice (freshly squeezed)
13 oz Monin Pure Cane Syrup (65.0°brix, equivalent to 2:1 rich syrup)
12 oz Egg white (pasteurised) or 3 dashes Fee Brothers Fee Foam cocktail foamer or Aquafaba or Egg white replacement (vegan)
3 drop Saline solution 4:1 (20g sea salt to 80g water)
× 1 1 serving

Prepare:

  1. Select and pre-chill an OLD-FASHIONED GLASS.
  2. Prepare garnish of orange zest twist.

How to make:

  1. SHAKE all ingredients with ice and strain back into shaker.
  2. DRY SHAKE (without ice) to emulsify.

Garnish:

  1. EXPRESS orange zest twist over the cocktail and use as garnish.

Greek? Egg? Lemon? Avgolemono (Greek: αυγολέμονο or αβγολέμονο literally egg–lemon) was just sitting there ... "The whites may be beaten into a foam separately before mixing with the yolks and lemon juice, or whole eggs may be beaten with the lemon juice"
