Glass:

Serve in an Old-fashioned glass

Ingredients:
2 fl oz Light gold rum (1-3 year old molasses column)
23 fl oz Maple syrup
23 fl oz Lime juice (freshly squeezed)
× 1 1 serving

Prepare:

  1. Select and pre-chill an OLD-FASHIONED GLASS.
  2. Prepare garnish of Corn Foam. Add 1 pre-boiled corn on the cob to a pan with 1 litre of water and 1 kg of caster sugar and simmer on medium heat for 1 hour. Add 1 leaf of gelatine and leave to cool. Pour 500ml into a cream siphon and add 2 NO2 cartridges and shake before dispensing your foam.

How to make:

  1. SHAKE all ingredients with ice.
  2. STRAIN into ice-filled glass.

Garnish:

  1. Top with Corn Foam for garnish.

History:

Swedish Bacardí Legacy 2015 winning cocktail by Emil Åreng at Open/Closed bar in Umeå.

This drink was inspired by the legendary Pepin, president of Bacardí from the 1940s to 1976, he twice saved the company and helped it to stay alive and healthy."

"The ingredients represent flavors from the countries where he built new distilleries after the Cuban Revolution: Brazil (lime); Canada (maple syrup); the Mexican distillery dating from the 1930s (corn) and of course, BACARDÍ Carta Oro from Puerto Rico.
